Twice Baked Potatoes with Shrimp

These gorgeous potatoes make an elegant side dish or a meal in itself. Sinfully delicious.

Ingredients:

4 large potatoes
½ cup heavy cream
Salt to taste
A dash of freshly grated black pepper
A dash of freshly grated nutmeg
¾ cup green onions, finely chopped
¾ cup grated Swiss cheese or cheddar cheese
8-10 medium-sized shrimp, peeled and deveined
1 teaspoon butter

Directions:

Rinse the potatoes and pat dry. Prick the potatoes with a fork on the sides.
Preheat the oven to 180°C/350°F, and place a rack in the center.
Wrap each potato with foil, place on an oven sheet, and bake for 1 hour.
Remove the potatoes from the oven and allow to cool down until you can handle them.
Slice each potato in half, and scoop out the top of each potato half, leaving some of the flesh attached to the skin.
Add the scooped potato to a bowl and mash well with a potato masher.
Heat the cream and pour it over the mashed potatoes.
Add salt, nutmeg, black pepper, and half of the grated cheese.
Place the butter in a skillet over medium heat, add the shrimp and sauté for 3 minutes or until the shrimp turn opaque. Add to the mashed potato and mix well.
Spoon the mashed potato mixture back in each potato skin.
Sprinkle evenly the rest of cheese on top.
Return the stuffed potatoes to the oven on the baking sheet, and broil just to melt the cheese on top and slightly changing its color. Enjoy!
