Stewed Zucchini and Tomatoes (Koussa wbanadoura)
Looking for a delicious zucchini side dish with few ingredients and simple cooking? In Lebanon, we prepare zucchini in a variety of ways. Here is a quick sautéed zucchini cooked in tomatoes. This is incredibly easy to make, so if you are looking for a delicious and fast side dish, keep this in mind. Serve it with pita bread.
Ingredients:
- 1 kg /2lb. 4 oz. zucchini (I used baby zucchini)
- 1 large red onion, finely chopped
- 6 medium-sized tomatoes, diced (no need to peel)
- 4 tablespoons canola oil
- A dash of freshly grated black pepper
- A dash of chili flakes
- Salt to taste
Directions:
- Set a pot over medium heat, add the oil and onion and sauté to transparent.
- Add the zucchini and chili flakes. Stir for one minute.
- Reduce heat to low, cover the pot and simmer for 7 minutes.
- Stir the zucchini every 2 minutes to avoid any sticking to the bottom of the pot and burning.
- Add the diced tomatoes, salt and black pepper. Cover and let it simmer over low heat about 15 minutes. Serve it with pita bread.
