Stewed Zucchini and Tomatoes (Koussa wbanadoura)

Looking for a delicious zucchini side dish with few ingredients and simple cooking? In Lebanon, we prepare zucchini in a variety of ways. Here is a quick sautéed zucchini cooked in tomatoes. This is incredibly easy to make, so if you are looking for a delicious and fast side dish, keep this in mind. Serve it with pita bread.

Ingredients:

  • 1 kg /2lb. 4 oz. zucchini (I used baby zucchini)
  • 1 large red onion, finely chopped
  • 6 medium-sized tomatoes, diced (no need to peel)
  • 4 tablespoons canola oil
  • A dash of freshly grated black pepper
  • A dash of chili flakes
  • Salt to taste

Directions:

  1. Set a pot over medium heat, add the oil and onion and sauté to transparent.
  2. Add the zucchini and chili flakes. Stir for one minute.
  3. Reduce heat to low, cover the pot and simmer for 7 minutes.
  4. Stir the zucchini every 2 minutes to avoid any sticking to the bottom of the pot and burning.
  5. Add the diced tomatoes, salt and black pepper. Cover and let it simmer over low heat about 15 minutes. Serve it with pita bread.
