Nutella Filled Cookies

If you are a regular reader over here, you will probably know that I am a Nutella lover! And I am not the only Nutella addict at home. My youngest son inherited this addiction from me! Every time I see the Nutella jar sitting on the shelf in my kitchen, my imagination runs wild and the baker chef in me awakens! So today the first thought that popped to my head was these Nutella filled cookies that came out incredibly tasty and crunchy. They make a great afternoon tea snack or even a lunch box treat. My son adored them and I promised him to make them on a monthly basis.

However, if you are following a special diet to lose weight, never think of making this recipe. The aroma will tempt you beyond your ability to resist. Just remember that I warned you!wink

Using a teaspoon, scoop out Nutella and place in small drops on a cookie sheet lined with parchment paper.Freeze the Nutella drops for 1 hour to firm up and solidify. (This will make it easier for you to stuff the cookies with Nutella later)

In a large bowl add the flour, icing sugar and vanilla extract.Melt the butter over low heat and add to the flour mixture

Rub the mixture together

Knead together obtaining a butter dough.

Break the dough into equal balls, roughly the size of an egg.

Hollow out the center of each ball using your index finger

Fill the hole with a Nutella drop. Seal the dough patching it together and roll each into a ball.

Flatten each dough between the palms of your hands to a thickness of 1cm/ about ½ inch.

Using a cup or a cookie cutter, recut each flattened dough (for better looking cookies)

Ready to transfer to a baking sheet.

Place on a cookie sheet lined with parchment paper, making sure to leave some space between one cookie and another.

Bake the cookies for 12-15 minutes until the cookies turn pale golden. Remove from the oven and set aside to cool down

Ingredients:

4 cups flour

1 cup icing sugar (powdered sugar)

4 sticks or 2 cups butter (about 500g. )

½ teaspoon vanilla extract

For the filling:

¾ cup Nutella

Directions:

Preheat the oven to 200°C/400°F.

Melt the butter over low heat and add to the flour mixture. Rub the mixture together and knead together obtaining a butter dough.

Putting it together:
