Custard in a Glass

Now forget about the box mixed and make your own custard from scratch.Custard in a glass, topped with cookie crumbs, raisins, and pine nuts. Easy to put together, delicious, and a great way to satisfy your sugar craving. It is rich and creamy and can be made on stovetop. It is always a winner and the best part is that it can be made ahead of time!!  Garnish with pine nuts and raisins just upon serving!!

Custard in a Glass

Ingredients:

  • 7 tablespoons all-purpose flour
  • ½ cup butter (1 stick)
  • 4 cups milk
  • 1 cup heavy cream
  • 1 ¼ cups sugar
  • 2 eggs, beaten
  • ½ teaspoon vanilla extract
  • 200 g./7 oz. plain cookies

For garnish:

  • ½ cup pine nuts
  • ½ cup raisins

Directions

  1. Using a food processor grind the cookies until they resemble coarse crumbs, set aside.
  2. In a bowl mix the flour, heavy cream, milk, sugar, beaten eggs, and vanilla. Whisk to incorporate.
  3. Melt the butter in a large stockpot, add the bowl mixture, and stir constantly over medium high heat.
  4. Continue whisking until the mixture thickens.
  5. Distribute the custard to individual ramekins.
  6. Top with the crushed cookies.
  7. Set aside to cool down completely.
  8. Cover each ramekin with plastic wrap and chill in the refrigerator for at least 2 hours
  9. Garnish with pine nuts and raisins upon serving
