Almond Rochers
Almond Rochers
I love these almond rochers with my morning coffee. They are crisp on the outside and chewy on the inside. Mmmmm!
Ingredients
2 cups powdered almond
1 cup icing sugar (powdered sugar)
2 egg whites
¼ teaspoon baking powder
½ teaspoon vanilla extract
A few maraschino cherries to top the rochers
Directions:
Preheat oven to 200°C/400°F.
In a bowl mix together the powdered almond, icing sugar, egg whites, baking powder, and vanilla until you obtain a sticky mixture.
Line a baking tray with parchment paper.
Wet your hands and roll the mixture into small ball, roughly the size of an apricot.
Place the balls on a lined baking tray, leaving about 1 inch/2.5 cm between one another.
Place a maraschino cherry (or half one) over each ball.
Bake until slightly brown.
Remove from the oven. Set aside to cool.
Transfer to a serving dish.
